Ukai isn't shown in any relationships beyond the ones he has with the team and their advisor, so it's really up in the air as to what his orientation would be. It's highly unlikely that he'd care either way what gender his house spouse is, though, as he seems far too chill (when his temper isn't provoked) to really sweat that sort of thing. Even if his parents really want him to get married, it's not his priority.

Except, Ukai is enough of a side character that he doesn't have much of a history listed on any of the wikis. To be fair, this is because we've only gotten small snapshots of information about his backstory from him.
What we do know about Ukai starts off with the fact that he's absolutely a Karasuno alumnus. Much of his time - at least in third year, as he tells it - was spent on the bench during official matches, where he was the backup setter in much the same situation that Suga was going through before they began to strengthen their techniques. Still, despite this, he helped facilitate the friendly rivalry between Karasuno and Nekoma while he was a student, befriending another benchwarmer (who also becomes a coach later on, like this is a running theme).
From there, we don't really know much of his life between high school and the start of canon. He did go to college, but it's never specified what he went to college for, especially since he winds up in his mother's family shop. Either way, that's where we find him: playing clerk at the Sakanoshita Store. At first, he just seems like a quirky background character that is bound to show up every now and then, but soon it's revealed that he's the grandson of the highly esteemed but very much retired Coach Ukai Ikkei, and the volleyball club advisor is pursuing him as the coach for their current generation of crows.
It takes a lot of begging and cajoling and manipulating, really, to get Ukai Keishin to agree to even come and see the kids during practice. This mostly involves the fact that Takeda is a little shit and got them a practice match with Nekoma, inciting Ukai's deeply ingrained rivalry with Nekoma once again. So he agrees to do what he can for them before the practice match, if only so he can help facilitate the rivalry between the two schools. Especially after his grandfather started severing ties between teams he'd previously kept constant contact with.
And it's after he's coached them up to and through the Nekoma match that we wind up where we are now: Ukai decides to stick around to help the fledgling crows grow, so that they might change Karasuno's reputation as flightless. This carries through their various training montages with other teams, all the way through their official matches, and up to the final tournament that the current team will ever be able to play in together.

Personality:
At first glance, Ukai seems to be a very temperamental, very unserious sort of person. He yells a lot when scolding the teenagers that make up the Karasuno team about "making a ruckus" outside of his store, and can be seen kicking back at the counter while smoking and reading the paper instead of restocking or keeping a close eye on the people that are currently in the store. It isn't very hard to incite his temper, either, so the littlest thing might cause him to snap and shout. He can be pretty vicious when he does it, too, so it's not typically recommended to provoke him. (It makes him a little bit of a hypocrite about the "no ruckuses" signs he has everywhere around the shop, but no one's tried to call him on it for obvious reasons.)
Truth of the matter is, Ukai Keishin is a little bit more than a hair trigger temper that he pretty much chainsmokes through. He's actually pretty serious, when you get right down to it. Sure, he's hardheaded and rough around the edges, but he's a good guy who means well and wants others to do well. It's a lot of tough love, which he definitely employs with the Karasuno team. He wants them to grow, and excel, and despite his initial resistance to becoming their coach he's obviously devoted himself 100% to the cause. When he's not working or with them, he spends all of his time looking at old games, reading up on techniques, and trying to get them prepared for their oncoming matches.
It does, honestly, have a lot to do with his competitive side. It's pretty obviously showcased in the longlasting rivalry with the Nekoma volleyball team, and with the fact that he's pretty determined to fight to the last and get the upperhand, even if he's not the one that's actually playing on the court at the time. But while it might have a lot to do with it, he's still a good guy that's basically gone from reluctant coach to enthusiastic volleyball parent.
A volleyball parent that is strangely comfortable with using alcohol as an example for a bunch of high schoolers, but he's twenty-six. He's crotchety, for sure, and seriously devotes himself to things when he really gets attached/into it, but he's pretty easygoing and mellow when he's not being irritated in some way.
This really lends itself very well to his analytical skills. Ukai isn't as insanely talented as, say, Kageyama, but he's still proficient at breaking things down so that he can see all of the working parts. He's smart, and he's used those abilities as a mentor for quite some time now. Strategizing and scheming aren't below him in the least bit, and he's not afraid of being a little underhanded or telling his kids to be a little underhanded (so long as it's still a legal play). He works hard and recognizes that the kids all work hard, too, so he's prepared to employ whatever means necessary to take advantage of their work and skills. Whether it's enhancing the ones they already have, or stealing skills and plays from other teams, he's encouraging and does what he can to get them where they need to go.

As 100% human in a series with no special powers, just insane skills with sports, Ukai is an average guy. He's skilled as a coach, though, due to his observational skills and previous experience as a mentor through his school years. But he's got decent stats with good power, game sense, and technique, and average jumping power and stamina. Though, his speed stat is fairly low.
While he was a setter in school, and implies he's one on the adults' neighborhood team, he seems to have a very balanced understanding/ability with other positions, too, capable of teaching all of them fairly well.

[ ... his priorities might not be the best, but at least he's not yelling about being kidnapped, exactly? ] I'm all for the new digs, and the car is great, though I ain't got a clue if my license is up to date or not...

After spending weeks upon weeks of getting up early after going to bed late, Ukai's suprirsed that he hasn't gotten sick yet. It's legitimately shocking, and he should know better, but old habits die hard. He did it in high school, he did it in college, and now he's doing it as a coach. But he has to make up for the time lost at the store, while making sure that he studies as much as he can for the team, and there's really only one way to do it: work in the pre-dawn morning out in the fields, before going to work in the store for a couple hours, and then getting to the school so that he can be prepared for when the team starts filtering in and out between breaks and after school club. Then it's back home for an hour or two at the shop, and then he's off to look over old matches and study more recent ones, looking for anything that they can use.
When he gets to the field for harvest, he stares at everything around him for a long moment. His brain isn't online just yet, and he yawns wide as he considers the task ahead of him. It won't take too long for him to get a decent haul, he knows that. So he's not too worried.
But with a giant yawn, he heads off down the row, shoving his hands into his pockets as he walks in a tired swagger. Today, they should work on receives after warmup, and then they can move on to serves.
"Go over a mountain," Ukai sings in a mumble, cigarette dangling from his mouth unlit. Maybe once they finish serves, they'll practice the moves they learned during their summer camp. Yeah, that sounds like a good plan of attack. Once he's woken up more, he figures he can lift it from the rough draft that it is. "Go over another mountain, that one too..."
Really, he can even run it by Sawamura. The captain's had a pretty good eye for his teammates, and it shows, so he trusts him to be able to collaborate with him on this. Shimizu can probably help, too. She's been taking notes on the team's progress...
